Bloom the spice, then give it company

Warm the fat first
Turmeric opens in oil or ghee. A brief bloom on medium heat wakes color and aroma before liquids go in. Dry powder tossed on cold food stays dusty.

Add a bitter or acid edge
Lemon, tamarind, or a handful of greens keeps the golden note from turning flat. Black pepper is traditional; a squeeze of citrus works in lighter dishes.

Mind the stain
Fresh root and strong powder color wood and plastic. Use glass or stainless for long soaks, and wipe boards soon after prep.

Store away from light
Ground turmeric fades in clear jars on a sunny shelf. Opaque tins and a cool cupboard keep the batch vivid longer.
